Go Banana’s for Banana Bread

Who love’s Banana?

I sure do, banana’s are a great source of slow release carbohydrates rich in vitamin B-6 as well as providing a good dose of potassium an important electrolyte in regulating the heart and water balance. But beyond the health benefits, banana’s are very versatile and are filled with fibre helping keep away those munchies always good =)

But… I’m not the biggest fan of overripe banana’s, however, I hate food waste so I always use them up to make a tasty banana bread perfect as a snack, breakfast or a topper =)

So Here is a little Mint Choc Chip Banana Loaf Recipe for your weekend meal prep

187g Banana ( I use two small bananas)

90g oats

50g Muscle Mousse Bubbly Mint

1 egg + 75ml two chick egg white

75ml Oat Milk (I used Alpro)

26g Cocoa Mass chips ( I used Muscle Food)

Add all ingredients into a food processor and combine until smooth, then transfer to a lined loaf pan. Cook in the oven at 190c for 25-30mins until the cooking spike comes out clean, set aside to cool then cut into 10 slices.
