Bean brownies are you serious! When I told my friend I’d been experimenting with beans in baking she was like what? doesn’t that taste weird? Although nothing can ever replace proper brownies it doesn’t mean that you can’t make a healthified version that still tastes yummy
I must admit when I saw it on Instagram even I was a little skeptical, will it hold together? will it not taste of beans? but like anything in life you have to give it a go right? otherwise, you will never know
After a fair few attempts, I came up with this yummy Chocolate Butterscotch protein brownie ( what a mouthful)
Recipe
1 can kidney beans
30g Muscle Mousse Butterscotch
25g Cocoa powder
30g Oats
1 egg
100ml almond milk
1tsp baking powder
pinch of xanthan gum (not necessary but I find it helps bind better)
Mix all in a food processor (I know, that simple) then bake in a preheated oven for 25-30mins at 180c, cut in desired chunks I made 12 smallish squares otherwise they wouldn’t last very long
